  • Delivery,
  • Cooking
  • Holding (Hot & Chilled)
  • Cooling
  • Defrosting
  • Refrigeration
  • Cleaning Checklist

Additional Records may be required

  • Product Record – (Salads and other mixed ingredient items)
  • Traceability Record (Beef, Chicken, Pork)
  • Traceability Record (Bakery, Fresh Cream and general ingredients)
  • Food Waste (look for trends in end of day waste)

Generally as a Deli cooks, holds and produces the same items every day. All these common daily items can be pre entered for you in the appropriate locations.
