- Defrosting
- Refrigeration
- Cleaning Checklist
Additional Records may be required
- Product Record – (Salads and other mixed ingredient items)
- Traceability Record (Beef, Chicken, Pork)
- Traceability Record (Bakery, Fresh Cream and general ingredients)
- Food Waste (look for trends in end of day waste)
Generally as a Deli cooks, holds and produces the same items every day. All these common daily items can be pre entered for you in the appropriate locations.
